The problem we set out to fix
If you search "how much brisket per person," you land on long articles that bury the answer. Some of them are genuinely well written. All of them assume you're reading at a desk, at leisure, with time to work through a discussion of Texas barbecue history before you find out whether to buy one packer or two.
You're usually not. You're standing at a meat counter on a Saturday morning, on your phone, with a number in your head you're not confident about and someone waiting behind you. That's the moment this site is built for. The answer is the first thing on the page, it recalculates as you change anything, and there's nothing to submit.
Where the numbers come from
The portion rates here are the ones working pitmasters and caterers have used for decades, not something we invented:
- 1/2 pound of cooked brisket per adult when brisket is the main dish. This is the widely used baseline across barbecue restaurants and catering guides.
- 1/3 pound per adult for sandwiches, because bread and toppings carry part of the plate.
- 1/4 pound per child under about 12.
- Roughly 50% total yield loss from raw to sliced — 15 to 20 percent trimmed off before the cook, the rest rendered and evaporated during 10 to 14 hours of smoke.
- A 20% reduction when three or more substantial sides are on the table, which is the figure caterers plan around.
These are estimates, and we'd rather be honest about that than pretend otherwise. Appetites vary enormously by region, crowd, and time of day. The calculator rounds up to the nearest half pound on purpose — running out is a much worse outcome than having leftovers, and brisket leftovers are good.
How the site is built
Static HTML, no ad network, and a calculator that runs entirely in your browser — nothing you type into it is sent anywhere. It loads fast on a bad connection at a grocery store because that's exactly where it gets used. We run Google Analytics to see which pages actually help people; the privacy policy covers what that does and doesn't collect.
