Using this site

brisketperperson.com is free to use. You're welcome to reference our figures, screenshot the size chart for your own shopping trip, and link to any page here. What you may not do is republish the site's written content wholesale as your own, or scrape it at a volume that degrades the service for other people.

Estimates, not guarantees

This is the part that matters. Every number this site produces is anestimate based on widely used portion averages. It is not a guarantee about your specific event, your specific guests, or your specific piece of meat.

Real appetites vary by region, crowd, weather, time of day, what else is on the table, and how good your brisket turns out. Yield varies with the grade and thickness of the packer, how aggressively you trim, your cooker, and how long you rest it. We round up rather than down precisely because these variables run in both directions. Use our number as a well-informed starting point and apply your own judgment — especially for weddings, catering jobs, and anything else where running short would be a genuine problem.

Food safety is your responsibility

Nothing here is food safety guidance. This site does not advise on safe internal temperatures, holding times, cooling, storage, or reheating. Consult theUSDA Food Safety and Inspection Service for that, and follow it. You are responsible for the safe preparation, holding, and serving of anything you cook.

This site is provided "as is," without warranties of any kind. To the fullest extent permitted by law, we accept no liability for any loss or damage arising from your use of it — including buying too much brisket, buying too little, or any outcome of an event you catered using these figures.

The written guides, calculator, and design on this site are our own work and remain our property. Portion conventions themselves — half a pound per person, fifty percent yield loss — are common industry knowledge and belong to nobody.
